Spent time with [livejournal.com profile] taogrl and some old friends last night. 'Twas fun and the food was good.

And now, it's time for a little spoof on tech support that some of you have probably seen, but it makes me chuckle:

I hope everyone is having a delightful day, and gearing up for the next task at hand. All this celebration gives us a chance to pause and reflect on things we like to change and the things we need to change.

Of course the biggest, most everpresent change is to retrain ourselves to write the accurate year on our checks and legal documents. Good luck to us all on that!

Oh, I'm tired.

But things are good. My brother was up and at 'em at 8am, and I got up to chat with him and made some tea and coffee. Then I set about to making the sweet potato casserole for today's larger family gathering that we'll leave for in a few hours.

I could stand a nap.

Last night went well. No family strife. I caught my mother trying to recount seedier moments in our family history to Siobhan. I'm fairly sure she's heard it before. So I broke it up and we opened presents. All was well; we got some neat stuff. Mom bought me a backup camera for my car. That should be fun to install.

John loves A Christmas Story as much, if not more, than I do. We've been watching bits of that over the past day.

He loves his Christmas music, too. He's a big cutie.

Everyone seemed to love my dinner yesterday. It all worked fabulously.

I'm cooking the Christmas Eve dinner, so I'm about to head into the kitchen. I hope everyone is having a marvelous day!

The menu:
Prime Rib
Baked Potato
Stuffed Mushrooms
brussels sprouts
yorkshire pudding

Pear Crisp
Lemon Meringue Pie

The pie is done. The stuffed mushrooms I will prep now to bake after the prime rib. The Prime rib goes into at 3:30, along with the potatoes. Hopefully I'll have time to relax at some point. Sleep kinda sucked hard last night.

The gifts for the family are under the tree, my brother and sister in law will be late. So dinner will be served later.

And now, back to the kitchen!

I hope you all have wonderful plans for today!

I plan attending a bbq at M and T's house. I think I'm going to try a pan grilled flatbread recipe and bring some interesting things to top on it. The pan grilling will allow me to do most of the work ahead of time and then I can use the grill to reheat/melt some of the topings on the flatbreads.

So, time to get off my duff and head to the store.

So, here is how you make the Stuffed Salmon Recipe. For the full instructions, consult this cookbook by Jacques Pepin.

So, the first thing you want to do is make the dough. It's flour, butter, water, a little salt. I forgot to take a picture of this part. But you freeze the flour in advance, keep the unsalted butter chilled. Combine ingredients until just combined, then roll out to an 16x10 size. Fold it three ways like a letter, then roll it out again, then chill for 45 minutes, then repeat. Chill until ready to prepare the dish.

Damn, I'm miffed I didn't photograph this part. Ah well.

Perhaps some of you are already on your way to being offline for the holidays.

To all of you: Have a very Merry Christmas. If you're not into Christmas, have a merry one, anyway. And may each day after be merry. Though don't blame me if it's not, unless you catch me doing donuts on your lawn. Happy Solstice, Happy Channukah. Happy Whatever it is you are Celebrating. May the coming year be happy, warm, and prosperous for you all, regardless of celebratory preference.

For those of you who think there's a war on Christmas, shhh. Go back to sleep. It will all be okay. I know, I know. The Beastie Boys said it best when they said, "You gotta fight for your right to party," but this is ridiculous. No one is herding you into Christmas Camps and forcing you to take a "Silent Night" Shower. There are Christmas trappings everywhere. Relax and enjoy your time with your family.
