I made this delicious popover recipe at my mother's house last night. It has the delightful consistency of yorkshire pudding.
I wish to make more for leftovers tonight. Let's see if Ican remember the recipe from memory:
Preheat oven to 400.
Mix:
1.25 cups of flour
1.25 cups of milk
3 eggs
1/2 tsp salt
2 tbls. melted unsalted butter
1 tbls unsalted butter for popover cups
Mix ingredients until they are the consistency of heavy cream. Stick empty, greasted popover pan in oven for 2 minutes to preheat. Remove pan and put a little bit of butter in each cup. Fill cups half-way with mixture. Cook at 400 for 20 minutes. Change heat to 325 and cook for 20 more minutes.
Remove and serve.
