Platinum Chefs

Well, tonight was my night for cooking choosing the recipes for my cooking club. Tonight's theme: Cuban cuisine.

The menu:


Plantains --this was okay. Surpisingly, they were like potatoes. I think this was due to the fact that they were thickly cut, as per the recipe.
Corn Pancake Sandwich--this was the hit of the dinner, by far. Everyone was surprised by how good it tasted. It's two sweet corn pancakes, made with ingredients that include frozen corn, corn meal, mozzerella cheese and sugar. Then you put a slice of swiss cheese between two pancakes. We scarfed them up before dinner.
Black Beans and Rice -- I converted a woman who was against black beans. I used an old recipe my mother gave me, ham hock and all. Pain in the ass, and not my bag, baby, but they seemed to enjoy it.
Cuban Hash (Picadillo)-- TG, one of our outspoken club members, calls it Pic-a-dildo. And this is a term of affection for it, apparently, because she loves the stuff. It was actually rather good. It had potatoes, peppers, beef, tomatoes, and assorted spices.
Arroz con Pollo -- also good, but by the time we got to it, we were stuffed.

And dessert. I was worried about dessert. It was a bitch to make. I made Cuban Pudding. It's a tasty vanilla pudding guaranteed to give even the stongest stirrer carpel tunnel. The directions were vague about how long it would take to cook. I dumped a metric ton of corn starch to make it thicken to the proper consistency. It turned out quite tasty, but damn, I was sweating the fact that it wasn't going to be thick enough.

All is well now, and I don't have to plan a full dinner for the club for another 7 months or so.

She is geeked to try some of the ones she hasn't yet and wants to compare ingredients for the ones she has...
