weaktwosI had forgotten how bloody beets are. I just finished preparing them. Let me tell you, I'm positively crimson!
They will soon be mixed with ricotta and parmesan cheese and placed onto sheets of pasta to make homemade roasted beet ravioli. I opted for them instead of the salmon raviolis. That will be for another time. I will also make a four cheese ravioli.
