Dec. 1st, 2003 08:34 amI thought I would mess around with email lj-posting. Yes, I'm behind
the times, but oh well.
I have returned to work after a 5 day absence, and I'm somewhat less
than enthused. However, I have much to do. I'm the lead this week, so
I'll be extra busy. "Queen Beeeeotch" is what my coworkers
affectionately call me.
The good news is that I woke up on time, despite the alluring entreaties
of my adorable, soft and cuddly feline companions.
Christmas cards...krikey! I have to work on those.
Anyone have a favorite beef stew recipe they like? I wish to make some
this weekend.
I hope everyone else's Monday is going well!

Date: 2003-12-01 09:42 am (UTC)I start with a good cut of meat--I avoid the "stew meat completely. I cube it and brown it in oil. Once it is browned, I drain the fat off and pour in about 3-4 cups of V8 juice (or the Raley's equivalent) and a cup of water. I toss in an onion that has been quartered and some garlic. I add some seasonings--sometimes I do it myself and sometimes I just use one of those packages. If I do it myself, I put in salt, pepper, a bay leaf or two, some rosemary, sage, and so on. I let it slowly simmer for a couple of hours.
After the meat is tender I add vegetables--carrots,potatoes, celery, mushrooms, more onions, some sort of squash, corn, if available, and whatever else looks good. I add them kind of in the order of the time it takes for them to cook. I'll adjust the water and seasoning to whatever is needed. If I want it thicker, I add a little cornstarch and water, but usually it's thick enough.
