Graduation Day

rubbrduckage and I graduated from our second cake class. It's rather sweet of Michael's to give us certificates.
So, tonight's final was a basket weave cake with royal icing flowers and birds on it.
The cake: Chocolate Genoise
What does this mean? It means you're forced to sound nasally when you mention the cake name. Because you beat the bejeezus out of the egg yolks and sugar, then gently fold in the flour and a rich, bittersweet chocolate using the wings of fallen angels(If you can catch 'em), the batter ends up very fluffy. After I baked the cakes, I prepped them for frosting and drizzled homemade raspberry simple syrup on the layers.
The filling: Raspberry Whipped cream
Frankly, the cake was lucky to get his filling. This whipped cream was so tasty that
taogrl and I nearly devoured it all. Any additional leftovers will be used on my coffee this week.
The cake was then frosted with a buttercream frosting.
In class, we learned the basket weave technique. it actually is easier than you think, assuming you have steady hands of steel. Then we did a rope pattern for the top and bottom fringes. Following that, we added about 30 royal icing flowers we made earlier in the week. Then we added the leaves.
And voila! wicked heavy cake!
